How to Make Café-Quality Cold Brew at Home

Over the past three months alone, our café team has poured over 30,000 cold brews and cold brew lattes. While we love seeing your faces at the counter every morning, we believe everyone deserves a smooth, crisp, café-quality cold brew right from their own kitchen.

Here is the exact blueprint and formula we use behind the bar so you can recreate the magic at home!


🛠️ What You Need (Ingredients & Gear)

To get that ultra-smooth, naturally sweet flavor without the bitterness, accuracy matters. Grab a digital kitchen scale and gather these essentials:


☕ Step-By-Step Brewing Guide

Step 1: Grind Coarse

Start with our Ritual Cold Brew Blend, which we roast fresh locally.

  • Fresh is Best: If you have a grinder at home, grind whole beans to a coarse setting right before brewing.
  • No Grinder? No problem! When ordering online at functioncoffeeco.com, simply select the Coarse grind option on the product page, and we’ll handle it for you.

Step 2: Measure & Bag Your Coffee

Place your steeping pouch on a digital scale and measure out 150g of coarse coffee grounds.

Step 3: Pour & Weigh Your Water

We use reverse osmosis water in our shop, but filtered water straight from your fridge pitcher works great at home.

Slowly pour 1,500g of water directly over the grinds inside the steeping pouch. Keep an eye on your scale as you pour to make sure you hit the target 1:10 ratio.

Step 4: Let It Bloom & Stir

Allow the coffee to steep for a moment. As water hits the fresh coffee, trapped CO₂ gases release and float to the surface, forming a "crust" layer of grinds at the top.

Once the coffee blooms, give the grinds a gentle stir inside the pouch so everything is evenly saturated.

Step 5: Seal & Steep for 24 Hours

Pull the pouch drawstrings, wrap them securely around the top, and tie it tight. Set your pitcher on the counter and let it steep at room temperature for 24 hours.

Step 6: Squeeze & Dilute

After 24 hours, carefully lift the pouch out of the pitcher and give it a gentle squeeze to extract every last bit of rich flavor.

Important Note: You now have a concentrated cold brew base! Do not drink it straight!

To turn your concentrate into the perfect cup:

  • For Black Cold Brew: Cut the concentrate with cold filtered water.
  • For a Cold Brew Latte: Pour the concentrate over ice and cut it with your favorite milk or creamer.
